Pasta doesn’t get easier than this, dairy-free 🌱and delicious and can be quite literally thrown together 🤩 at the end of the day. Who needs a béchamel when you can nooj it up 🤷🏼♀️✨
Here’s how 👇
80g cashew nooj
450g stock
2 tbs cornflour
2 tbs nutritional yeast
2 tbs olive oil
200g pasta
2 slices stale bread
250g broccoli and/or cauliflower
Mix the nooj, nutritional yeast and cornflour with the stock (gradually). Bring to a simmer while stirring. Add the sauce to the cooked broccoli and pasta. Blitz the bread, mix the crumbs with a little oil, sprinkle over the pasta, add some grated cheese too if you like. Bake for 10 mins then tuck in 😉
