Have you ever roasted garlic🧄? If you have then you’ll know the sheer pleasure of the smell wafting from the oven ☺️, if not then get on it, you’re missing out!

This creamy and delicious dip is perfect on toast or with warm, crusty bread, will even be great on some roast veg later in the week👌. Roast garlic goes so well with creamy Almond nooj too, we had to get these guys together 💫

SO easy to make, here’s how 👇
For the garlic confit…
4 – 6 garlic bulbs
1 tsp black peppercorns
Couple pieces lemon zest
Extra virgin olive oil, about 500 ml
For the dip…
Squeeze lemon zest
1 tsp chopped parsley
2 tbs (roughly) Almond nooj

Cover the garlic cloves with boiled water and leave for 10 minutes, this will help you remove the skins.
Drain the cloves and when cool enough, peel then add to an oven proof dish.
Add the peppercorns and lemon zest, add the oil. Make sure that the cloves are completely covered so as not to burn in the oven.
Bake for around 1 1/2 hours at 140, cover with foil after 30 mins.
When cool, mash about 1/3 of the cloves and a little of the cooking oil with the other ingredients, warm some bread in the oven and dig in 😋
