1. cut pumpkin and roast for 40 mins ish with salt, pepper, garlic, olive oil and herbs (sage, rosemary or thyme)
2. blend pumpkin with some pasta water and nooj cashew paste (can use regular vegan cream)
3. heat sauce and season to taste
4. add cooked pasta and enjoy
