Don’t you just love an easy cake recipe, we certainly do 🙋♀️🙋. No creaming of butter and sugar, just mix and go.
If you got your hands on some nooj and fancy baking with it, try replacing butter in your recipe with almond nooj and oil (2/3 nooj and 1/3 oil for your butter quantity). Just mix it in, so easy!
Banana and pecan loaf
225g SR flour
1/4 tsp bicarbonate of soda
50g almond nooj
25g vegetable oil
110g soft brown sugar
2 eggs beaten (we used 120g @crackd_it egg replacement instead of eggs)
450g ripe bananas, weighed with skin on, peeled and mashed
75g chopped pecans
Mash the bananas
Mix the bananas with all the other ingredients
Bake at 180 for 1 – 1 1/4 hours. Check after 1 hour and cover with foil if it’s colouring too much…
