Looking forward to watching this match 😍 and to add to our enjoyment we’ll be eating this delish plum Clafoutis with a big pot of coffee 👌.
SO easy to throw together, literally roast some plums, mix the batter and chuck in the oven. We used ground almonds in our version which made the top squidgy, moreish and a bit like a frangipane.
For a vegan version replace the eggs with something liked @crackd_it , 60g per egg, you’ll get the same result 😋
Here’s how 👇
450g ripe plums, halved, stones removed
2tbs brown sugar
50g ground almonds
2 tbs plain flour
100g golden caster sugar
2 egg yolks
80g almond nooj
Couple drops of vanilla essence
Heat your oven to 190
Add the plums to an oiled 23cm baking dish, sprinkle with the sugar and pop in the oven for 5 minutes
Mix the batter ingredients then pour over the plums and bake for 20-30 minutes. Sprinkle with icing sugar and enjoy warm with your favourite brew ☕️
Feel free to use ground walnuts or pistachios instead of the almonds. Vary the fruit too, any berries will work and if you can pick some wild blackberries, so much the better!
