Are you feeling hungry, wondering what to eat 🤔? If you haven’t tried Miso with pasta you definitely should, totally delicious 😋
Miso brings a savoury note to so many dishes and we know that it works so well Almond nooj, we just had to try it. Two versatile vegan kitchen staples together at last 😍
Here’s how (for 2)👇
1 tbs almond nooj
1 tbs miso (we used @misotasty white miso)
1/2 onion, finely diced
3 fat cloves of garlic
500g mixed mushrooms
Small glass white wine
Enough pasta for 2
Break up the mushrooms, fry in a little oil til nice and caramelised, remove from the pan and set aside
Fry the onion in a little oil until softened, then add the garlic and continue for a few more minutes.
Cook your pasta
Mix the miso and nooj together with a little of the pasta water.
When the onions are cooked, add the mushrooms along with the miso and nooj mixture. Simmer gently, the nooj with thicken the sauce to have some pasta water ready to add to keep a nice creamy consistency.
Add your cooked pasta and stir through and enjoy Time to #getnoojing🍷
